General Roasting Information

• Quality is determined in the cup

• Best roast maximizes all origin character (where grown)

• Origin (where) character usually happens between Light City and Full City Roast

• Only roast character eclipses origin character, roast character = the style of roasting

• Light City Roast = completion 1st crack – water & carbon dioxide go their separate ways – it is generally at this point that “origin character of coffee is highest = only 50% of sugars are caramelized

• Full City Roast= just after 2nd crack

• Non caramelized coffee taste sweeter

• Vienna Roast (continental) is generally where origin character stops and roast character begins

• French Roast (southern Italian-scura)

• Spanish Roast = 3rd crack

• It is between the French & Spanish that origin character ceases to be an issue

• Espresso is not a roast
